As promised, I’ve come to share our favorite healthy recipes with you all! As you’ve likely noticed throughout this clean eating series, preparing healthy recipes is super important to me. But I’m also a mom, teacher, and blogger; quick and simple meals are of equal importance!

15 Minute Sheet Pan Chicken + Veggies
Feeds a family of 4
Stuff to grab:
4 chicken breast
2 cups broccoli
2 cups fresh green beans
1 peeled, sliced zucchini
1 sliced red pepper
1 sliced yellow pepper
4 diced red potatoes
1 cup grape tomatoes
1 packet of dry Italian dressing (or make your own using this pin!)
Olive oil
Make it!
It doesn’t actually get a whole lot easier than this meal! Drizzle olive oil on the pan. Scatter all ingredients on a large sheet pan, keeping chicken together on one end. Sprinkle with dressing. I like to use my “food scissors” to cut the chicken into bite-size bits before placing on the pan. Put in the oven for 15-20 minutes. Chow down!
Crockpot Chicken + Rice
Feeds a family of 4 (usually with leftovers)
I’m not usually a big utilizer of the beloved, almighty slow cooker. Who has time in the morning before work to throw stuff into a crockpot? Not me. This is one healthy recipe that I’m willing to sacrifice a few morning minutes for though.
Stuff to grab:
32 oz Organic chicken broth
4 chicken breasts
2 cups fresh green beans
4-6 small red potatoes, diced
3 diced peppers (I like to use one red, one green, and one yellow)
2 cups organic brown rice
Make it!
Combine broth, chicken, and all veggies in crockpot. I cook 8 hours on low/4 hours on high, but crockpots definitely differ so be sure to monitor the chicken. While rice CAN be made in the crockpot, I choose to boil it 15 minutes before serving then add it in. Salt and pepper to taste. We sneak a few slivers of organic cheese on this for the kids.
Black Bean + Quinoa Santa Fe ‘Salad’
Feeds a Family of 4
Stuff to grab:
1 1/2 cups prepared quinoa
1 pound ground organic turkey
1 cup black beans
1 red pepper, diced
1 cup organic corn
1 avocado, sliced
salsa
Make it!
Brown ground turkey and prepare quinoa on stove-top. Combine turkey, quinoa, and black beans over heat. Serve warm mixture on a plate, topped with other veggies and salsa.
Don’t Stress.
The most important thing I can emphasize when it comes to clean eating, is to just go with it. You’ll have ups and downs. You’ll sneak something you probably shouldn’t. But by keeping the right foods on hand, reading labels, following healthy recipes, and shopping carefully–you’ll be on the road to a cleaner, healthier lifestyle in no time!

I’ve got my eye on that crockpot chicken and rice! It’s still cold where I am and slow cooker meals are so comforting.
It’s cold here too! We’ve definitely turned to this one a lot this winter! Sometimes I like to add a little more broth so it’s more soupy! You’ll have to let me know if you try it!
